Drink every time:

• The words "Chisolm", "Lincoln" or "Bogue" are said 
• There is an explosion
  
• Faraday drinks or plays with cards
• All seven men are onscreen at once 
• A horse falls to the ground 
  
• A wanted poster is shown
• A location title in onscreen 

Finish your drink:

• When the seven clear the town... the first time
